2 cups low fat yogurt
2 tsp baking soda
1 cup oil
1 1/2 cups brown sugar
2 tsp vanilla
2 beaten eggs
1 cup bran
1 cup Date Crystals®
2 cups flour
4 tsp baking powder
pinch of salt
1 cup blueberries
Combine yogurt and baking soda in a bowl. Set Aside. In a large bowl combine oil, brown sugar, vanilla, eggs (beat until fluffy), bran, Shields Date Crystals®. Sift together flour, baking powder, and salt. Add yogurt mixture, then flour mixture to oil mixture. Mix by hand until flour disappears. Fold in blueberries. Bake at 350° for 35 minutes. Yields about 20 muffins. Enjoy!
