6 medium eggs
2 cups Date Sugar®
2 sticks butter or margarine
1 – 12 oz. can frozen apple juice
2 cups flour
3 tsp baking powder
1 tsp soda
1 full cup Date Crystals®
1/2 cup pecan pieces
1 tsp vanilla
1/2 cup boiling water
Beat eggs and mix with melted butter and Date Sugar®. Then add thawed apple juice, undiluted. In a separate bowl, sift together flour, baking powder, soda. Once sifted, stir in date crystals, nuts, and vanilla. Mix well and add to sugar mixture. Once fully incorporated add boiling water. Mix thoroughly. Add to cake pan and bake for 30-35 minutes at 350º.
