Date Cupcakes

1 cup chopped dates
1 cup boiling water
2 tbsp butter
1 egg
1 3/4 cup flour
1 tsp baking soda
1 cup chopped pecans
1 tsp vanilla

Combine dates, water and butter in a mixing bowl. Set aside and let cool. Stir in sugar and egg. Combine flour and baking soda; add to date mixture. Stir in chopped pecans and vanilla. Spoon batter into paper-lined muffin pans, filling 2/3 full. Bake at 375º for 25 minutes. Yields 1 dozen.
