Fresh spinach topped with dates, dried cranberries, walnuts, pears, crumbled bleu cheese, and homemade mango vinaigrette
Vinaigrette:
2 tbsp + 2 tsp easy yolk
1/4 cup orange juice
1/4 cup chopped cilantro
1/4 cup apple cider vinegar
1/4 cup rice vinegar
1/2 tbsp cracked black pepper
1 cup frozen mango pieces
5 tbsp honey
1 tbsp chopped garlic
3 tbsp chopped shallots
1/8 tbsp salt
3 cups canola oil
Puree all ingredients except oil. Slowly add oil to the mixture once fully pureed.
